Chillai Kalan, the harsh period  begins around December 21 and lasts till January 31. The term "Chillai" is derived from the Persian word "Chilla," meaning 40, and "Kalan" means big in Kashmiri. This period is the coldest phase of winter in Kashmir, with temperatures often dropping to -10°C or lower in the valley.

The entire people of Kashmir  prepare for Chillai Kalan by stocking up on essentials like dried foods, nuts, and special winter treats. Houses are insulated with thick layers of mud and hay to keep warm. Traditional heating systems like Bukhari (wood-fired heaters) are lit to keep homes cozy.

 Chillai Kalan Diet  :

Harisa :

Nadir Monk : 

Lotus stem cooked with spices and meat is generally the most favorite recipe of every household of Kashmir just to keep themselves warm and energetic.

Kaka mach :
